Greetings Travelers!
Welcome back to The Stellar Edit, your weekly passport to extraordinary places, thoughtful stays, and escapes worth bookmarking.
This week, we’re hopping the pond and setting our sights on a European summer with a distinctly Danish point of view. Copenhagen has always had a certain quiet confidence, but just beyond the city, along the water in Køge, ROX Resort brings something a little more unexpected to the coastline.
Some resorts are built for escape. The ROX feels more like a beautifully staged pause.
Think sea-facing rooms, rooftop pools, a cocktail bar with proper ceremony, and a dining that feels polished, social, and entirely self-assured. It is coastal Denmark with a little glamour in the glass and a little edge in the design.
This is not minimalism for minimalism’s sake. It is composed, confident, and quietly unforgettable. The kind of stay that makes you rethink what a European summer getaway can look like.
Until next week, travel beautifully!

Introducing Rox Resort
Location: Køge, Denmark, near Copenhagen
The vibe: Continental seaside elegance with a Nordic rhythm and a slightly dressed-up pulse.
Paint the picture: Rox Resort is built around oceanfront living, with 156 rooms, a pool club and spa, and two high-end restaurants near Copenhagen. The resort frames itself around “Continental Elegance,” but the real appeal is the contrast: Scandinavian coastline, rooftop leisure, balcony mornings, and interiors that lean more theatrical than expected.
There is polish here, but not stiffness. It feels like the kind of place where breakfast can become a swim, a swim can become lunch, and lunch can reasonably become a martini.
Stellar Picks
Inspired by this week's featured destination, these are a few pieces I'm loving right now. Whether you're headed on vacation or simply embracing summer at home, I think these are beautiful staples you'll reach for again and again.
RHODE Pocket Blush
This has become one of my favorite beauty essentials. It blends beautifully, gives the prettiest natural flush, and the compact size makes it perfect to toss into any handbag for easy touch-ups throughout the day.
MAC Lipglass
I've been reaching for this for years. It's one of those products that instantly makes any look feel polished without trying too hard, and it's always in my makeup bag.
KATIE DEAN Beaded Bracelet
I love jewelry that's effortless, and this bracelet is exactly that. It layers beautifully with other pieces but also looks elegant on its own. It adds just the right touch of relaxed, coastal style.
KATIE DEAN Beaded Necklace
This is the kind of necklace that instantly elevates a simple outfit. The subtle pop of color feels perfect for summer, and it's a piece I know I'd wear long after vacation ends.
I’m always discovering new pieces like these.
Who This Is For
Rox Resort is for travelers who want Copenhagen access without staying inside the city’s familiar hotel circuit. It is especially right for design-conscious couples, stylish weekenders, and travelers who like their wellness with a little social energy.
The rooftop pool club is a major part of the appeal, with three heated pools, a sauna, a gym, a full menu served at the sunbed, morning yoga, afternoon DJs, and music that carries into the evening.
This is not the quietest spa retreat in Denmark. It is better understood as a coastal resort with mood, movement, and a sense of occasion.
How Do We Get There
The ease is part of the proposition. Rox Resort is in Køge, south of Copenhagen, and positions itself as a premium resort approximately 30 minutes from the city.
For travelers flying into Copenhagen, the stay works best as a chic add-on to a city itinerary or a softer landing after a few days of restaurants, galleries, shopping, and long walks along the canals.
The arrival should feel refreshingly simple: leave the city behind, follow the coast, and let the water reset the pace.
The Room Key
The rooms are designed around the view.Rox has 156 rooms, with oceanfront rooms, 114 direct sea-view rooms, and balconies across the property. The best room choice here is simple: book the view.
Elegant Park View Rooms
Offering a softer side of ROX Resort: calm, composed, and beautifully framed by greenery.
Overlooking the resort’s verdant park landscapes, this room is designed for travelers who want the polish of ROX with a quieter, more natural point of view. Inside, minimalist Nordic lines meet warm textures and gentle lighting, creating a stay that feels refined without ever feeling cold.
A distinct living area adds room to properly unwind, while the private balcony becomes its own little ritual: morning coffee in soft light, an evening breeze before dinner, or a quiet pause surrounded by green.
The Splurge
The splurge is the suite. At Rox, the difference between a good room and the right room appears to be space, balcony count, and how much of the sea you can claim as part of the stay.
The Signature Suite
This is the ROX Resort at its most cinematic. Set on the upper floors or tucked into the top-level wings, these suites open to sweeping ocean views, generous natural light, and the kind of coastal perspective that makes the room feel instantly removed from everyday life.
Inside, the layout is spacious and beautifully composed, with separate sleeping and living areas that invite you to settle in properly. Velvet upholstery, mirrored accents, burnished brass, and rattan lighting create a mood that is layered, glamorous, and quietly transportive.
Designed by Spik Studios, the suite feels less like a standard hotel room and more like a beautifully staged seaside retreat: polished, comfortable, and made for lingering.
Dining + Drinks
Dining is one of the sharper elements of Rox Resort and each experience seems most compelling when it is not trying to soften its edges.
Smith Brasserie
Smith Brasserie is ROX Resort’s bold dining anchor, where steakhouse soul meets polished coastal energy. Expect classic dishes, exceptional produce, raw delicacies at the kitchen counter, and generous favorites with real depth. It feels refined without being precious: confident, social, beautifully executed, and made for a proper Copenhagen-area dinner.
What To Order: Start with something from the raw bar, then go straight for steak.
The Birdcage
The Birdcage is the kind of hotel cocktail bar every great resort needs: intimate, theatrical, and made for lingering. Open evenings until late, it leans into classic pours, tableside service, bar snacks, and just enough glamour to turn a nightcap into a story worth retelling tomorrow over coffee.
What To Order: Ask for a classic martini with tableside service.
The Dumpling Bar by the Poolside
The Dumpling Bar brings a relaxed, flavorful pause to the rooftop pool day. Think steamed dumplings, fresh small plates, and easy shareable bites with a little Asian-inspired sparkle. It is refined but never fussy, perfect between swims, after a spa treatment, or with something cold in hand.
What To Order: Order dumplings poolside with something chilled and sparkling.

3 Rooftop Heated Pools At ROX Resort
Your Day At The Pool Club & Spa
10:00 AM | Arrival + Rooftop Reset
Ease into the day with check-in at The Pool Club, where the mood is polished, coastal, and instantly slower. Find your lounger, take in the sea views, and let the rooftop do what rooftops do best: make everything feel a little more cinematic.
The Scene
Three heated rooftop pools, open year-round, set the tone for a day built around lounging, dipping, and lingering beautifully.
11:00 AM | Swim, Sauna, Repeat
Move between the heated pools and sauna at your own pace. This is not a rush-to-the-next-thing kind of spa day. It is a soft circuit of warm water, quiet steam, sea air, and “maybe one more dip.”
Sauna + Wellness Spaces
The sauna adds that essential Nordic reset: warm, restorative, and perfect between pool sessions.

The Dumpling Bar For Poolside Snacks
12:30 PM | Poolside Lunch at The Dumpling Bar
By midday, the rooftop appetite arrives. Order from The Dumpling Bar and keep lunch relaxed, delicious, and right where you are. Think handmade dumplings, dim sum, sashimi, tartares, spritzes, and cocktails served poolside or at a rooftop table.
The Dumpling Bar
Asian-inspired bites bring a little culinary glamour to the pool day, making lunch feel less like a break and more like part of the ritual.
2:00 PM | Treatment Time
After lunch, book a massage and let the day slow down even further. Whether it is an in-room massage or a sun bed treatment, this is the moment where vacation officially enters the bloodstream.
Massage + Sun Bed Treatments
ROX offers treatments designed for deep reset without pulling you too far from the relaxed rhythm of the Pool Club.

A Visit To The Pool Club Isn’t Complete Without A Stop In The Sauna
3:30 PM | Optional Virtue Hour
For the wellness-minded traveler, this is your window for a gym session before returning to full rooftop leisure. A little movement, a little stretch, then straight back to the pool. Balance, but make it glamorous.
Gym Access
The gym gives the day a wellness edge for guests who like their vacation with a side of endorphins.
4:30 PM | Golden Hour Cocktails
As the afternoon softens, settle back into your lounger with something chilled in hand. The rooftop starts to glow, the cocktails become the main character, and the whole scene leans into that perfect European summer feeling.
Poolside Cocktails
Spritzes, cocktails, sea air, and rooftop views turn the final stretch of the day into a proper golden-hour performance.
6:00 PM | One Last Dip Before Dinner
Before heading out, take one last swim. It is the ROX version of a closing ceremony: warm water, coastal views, and just enough glamour to make dinner feel like the next chapter.
Sea-Facing Rooftop Atmosphere
The setting is the secret ingredient: coastal Denmark, rooftop energy, and a spa day that feels social, stylish, and quietly unforgettable.
Experiences
The best itinerary here is edited, not overbuilt.Start with the pool club, then add one coastal or cultural moment that gives the stay a stronger sense of place. Rox itself points guests toward rooftop wellness, nearby golf, and pool-club relaxation, making the resort a natural base for a coastal Copenhagen-adjacent itinerary.
Stand-up Paddleboard Along the Køge Coastline
This is the most natural Rox adventure: quiet water, horizon line, and the kind of movement that still feels restorative. Book it for a morning reset before the rooftop begins to gather energy. Our Recommended Guide
Walk Køge’s Old Town and Market Square
Køge has the kind of historic center that rewards a slow wander: local stories, market-square atmosphere, and just enough architectural texture to make the afternoon feel anchored. VisitKøge offers guided city walks through central Køge, with stories that often include the Køge Huskors witch trials, the Clog Battle, and Hans Christian Andersen’s stay in town. Our Recommended Guide
Visit MAPS — Museum of Art in Public Space
For something more design-minded, MAPS is the move. The museum is based in Køge and focuses on art in public space, with exhibitions, projects, research, education, and events. It is also very easy logistically, making it a clean cultural addition without turning the day into a production. Our Recommended Guide
Viking Ship Museum
A proper day trip to Roskilde, the Viking Ship Museum is the right counterpoint to Rox’s modern resort polish: older, rougher, saltier, and deeply Danish. The museum offers boat trips with oars and sails daily from May 1 through September 30, which gives the day a little salt and history without losing the coastal thread. Our Recommended Guide
For a longer stay, use the resort as a coastal base: Copenhagen when you want culture and restaurants, Køge when you want the horizon, the sauna, and the quieter side of the trip.
Elana’s Take
What I like about Rox is that it does not feel like Denmark trying to imitate a Mediterranean resort. It feels more interesting than that: a little moodier, a little sharper, and very much its own thing. "
I would book it as a Copenhagen-adjacent reset, especially after a few days in the city. Come here when you want the water, the robe, the rooftop, the martini, and the pleasure of a room with a real view.
It has enough polish to feel special, but enough energy to keep the stay from becoming too precious. For me, the move is simple: book the balcony, make time for the rooftop, and let the coast do most of the talking.
Until next week—travel beautifully. The next destination is already calling.
Warmly,
Elana
